I visited Saltine during a trip to Jackson. It was surprisingly very busy for a Sunday evening. I had the oyster sampler, gumbo, and catfish po-boy. The catfish was absolutely amazing. For the price, I expected a much richer and more developed roux. The oysters were fresh out of the wood-fired oven. The table service was not great, but it did seem as though the wait staff had to cover a fairly large floor plan across multiple rooms. Overall, there was nothing spectacular about the restaurant. I think that Saltine is worth skipping unless you’ve exhausted most of your other options.
